Paleo pancakes. I’ve tried various different recipes, I’ve tried just winging it and it seems I might’ve found my/the smalls ideal. Ideal in terms of flavour and consistency – but not in terms of ability to hold it together in the pan!
They just don’t seem to want/be able to flip the way ordinary pancakes do… I’ve tried talking it through with them, but of course they only get one chance, there are no practice runs in their short pancakey life.
Regardless of shape, they do taste great. Obviously they taste coconutty. So, if you don’t like coconut don’t try them, if you do then why not give them a go.
For those who want to give it a go, here it is.
1/4 cup (60ml) coconut flour
1/4 tsp baking powder
1/2 cup (120ml) coconut milk
1/4 tsp coconut oil
2 eggs, medium or large
Mix flour, baking powder & milk, add eggs, beat well. Dollop of coconut oil, mix a a bit more. Oil pan with a touch of coconut oil. Ladle in your dollops and carefully turn when ready.
Use whichever toppings suit you/your diet/your family. I’ll go for lemon, the smalls will go for lemon & a sprinkle of sugar.
